Quick & Healthy… Crock-Pot Sweet Potato Stew

Sweet Potato StewThe chill is in the air and for some of you there is snow on the ground.  The days are getting shorter and for me that often means I can get a little lazy and not want to cook! My answer to that lack of motivation is to whip out my Crock-pot. There is nothing better then walking through a door to a hot and ready meal, that is healthy and packed with flavor.

I have been experimenting more with spices and herbs in my cooking. This is a great way to add flavor without adding calories. Curry powder has been a new favorite of mine. The most common ingredients in curry powders include turmeric, fenugreek, coriander, cinnamon and ginger. These spices not only pack a lot of flavor they also have some great health benefits, for blood sugar control, cholesterol management and anticancer benefits.

My Crock Pot Sweet Potato Stew is a great way to have a filling high protein and high fiber meal on the table that is full of flavor and spice!

Crock Pot Sweet Potato Stew

Ingredients Sweet Potato Stew

  • 1 large or 2 medium sweet potatoes – chopped 1/2 inch pieces
  • 3 medium carrots- chopped 1/2 inch pieces
  • 3 celery stalks – chopped 1/2 inch pieces
  • 2 leeks – halved lengthwise and cut into 1/2-inch pieces
  • 3 cloves garlic
  • 3 tbsp fresh ginger (grated)
  • 1 cups yellow lentils
  • 4 cups vegetables broth
  • 2 cups water
  • 2 tbsp curry powder
  • 1 tsp cayenne pepper (to taste)
  • Juice of one lemon
  • 1 cup cilantro

Step 1: Chop all the vegetables and place into Crock-pot. IMG_5302

Step 2: Add the lentils, grated ginger, curry powder and garlic. IMG_5313

Step 3: Add vegetable broth and water. Set crock-pot on low and cook for 8 hours. IMG_5318

Step 4: After 8 hours of cooking on low.  Whisk in order to mash some of the lentils and sweet potatoes, this will thicken your stew.IMG_5327

Step 5: Add cayenne pepper to taste, juice of one lemon and 1 cup chopped cilantro. IMG_5329

Enjoy! My Challenge for you this week, is to stop using your winter excuses of too cold, dark so early, too lazy to cook! Get out that crock-pot and get creative with spices! IMG_5341

    Any way to do this without a crock pot? A

    • Hey Antonia,

      Yeah you can do this without a crock-pot… get a dutch oven or very thick bottom soup pot. Follow the steps similar to my white bean and butter nut squash soup. http://wp.me/p1uk78-lv Your lentils you may need to soak ahead of time, since they don’t have the 8 hours in the crock-pot.
