The chill is in the air and for some of you there is snow on the ground. The days are getting shorter and for me that often means I can get a little lazy and not want to cook! My answer to that lack of motivation is to whip out my Crock-pot. There is nothing better then walking through a door to a hot and ready meal, that is healthy and packed with flavor.
I have been experimenting more with spices and herbs in my cooking. This is a great way to add flavor without adding calories. Curry powder has been a new favorite of mine. The most common ingredients in curry powders include turmeric, fenugreek, coriander, cinnamon and ginger. These spices not only pack a lot of flavor they also have some great health benefits, for blood sugar control, cholesterol management and anticancer benefits.
My Crock Pot Sweet Potato Stew is a great way to have a filling high protein and high fiber meal on the table that is full of flavor and spice!
- 1 large or 2 medium sweet potatoes – chopped 1/2 inch pieces
- 3 medium carrots- chopped 1/2 inch pieces
- 3 celery stalks – chopped 1/2 inch pieces
- 2 leeks – halved lengthwise and cut into 1/2-inch pieces
- 3 cloves garlic
- 3 tbsp fresh ginger (grated)
- 1 cups yellow lentils
- 4 cups vegetables broth
- 2 cups water
- 2 tbsp curry powder
- 1 tsp cayenne pepper (to taste)
- Juice of one lemon
- 1 cup cilantro
