Quick & Healthy… Sweet & Spicy Corn Dip

My Lunch of Mixed Greens and Sweet & Spicy Corn Dip

I have a great vegetarian dish, that can be used infinite ways. The nice part is it requires no cooking and it is very fast. The dish is a perfect combination of taste and healthy ingredients. From the healthy fat in the avocado, and the protein and fiber from the edamame, black beans and kidney beans,  this dish will keep you full and satisfied no matter how you use it.  This week I am using this recipe as a topping for my salad at lunch and a side dish with my baked chicken breast. In the past I have brought this as an appetizer at parties to be served with whole grain tortillas or wheat pita chips. It is always the hit of the party. Consider making this for your next holiday party.

Sweet & Spicy Corn Dip:

Ingredients:

  • 1 small yellow onion
  • 1/2 green pepper and 1/2 red pepper
  • 1/2 carton of cherry tomatoes
  • 1 can black beans
  • 1 can kidney beans
  • Edamame (fresh or frozen)
  • 1 1/2 avocado
  • 1 jar of Stonewall Kitchen Spicy Corn Relish (can be found at many gift shops and specialty stores that carry these products)
  • cilantro

Step one: Finely chop peppers and onions. 

Step 2: Rinse the kidney and black beans off with cool water, then combine with peppers and onions in a large glass bowl.

Step 3: Cut the cherry tomatoes in 1/2. Add the cherry tomatoes and edemame to the bowl.

Step 4: Pit and peel avocado and chop into bite size pieces. Add the avocado and corn relish to the large bowl.

Step 5: Finish off the mixture with chopped cilantro and fresh squeezed lime juice.

Enjoy this dish all week, store in the refrigerator up to seven days!
